Dimples Pancakes is a bright orange Dutch mini pancake food truck and catering operation based in Western New York, founded by Lyon Lascu whose Dutch grandparents introduced him to poffertjes — traditional Dutch mini pancakes originating in 1700s Holland — and now serves them alongside stroopwafels, specialty coffee, cold brew, horchata, lemonades, and teas at farmers markets, festivals, and events across the Buffalo region. The truck built a loyal following through consistent weekly appearances at the Kenmore Farmers Market and the Broadway Market, and has since become a recognizable fixture at major WNY events including Taste of Buffalo, the Elmwood Bidwell Concert Series, and the Allentown Art Festival. Available for private catering at weddings, graduation parties, corporate networking events, and community gatherings throughout Western New York, Dimples brings a truly unique and crowd-pleasing Dutch food tradition to every stop on its busy seasonal schedule.
